It got its name from the local word “undhu”, which means inverted when translated to English, Undhiyu is a classical Gujarati dish cooked in an inverted clay pot. Lilva Kachori is a great monsoon and winter tea-time snack, kachoris are small crunchy balls made of flour and stuffed with filling. Kachoris are a famous snack in the western and northern parts of India. Lilva Kachori is a special Gujarati version of kachoris, made with a filling of pigeon peas. It is a heavenly snack that is made using a mix of mashed potatoes, spices, tamarind chutney, coconut, onions, pomegranate, peanuts, and coriander. This filing is placed between two bread buns and then they are cooked on a Tawa with some oil. The buns are pressed and flattened to make the Dabeli what it truly means.
